A very popular and healthful mushroom, Maitake has a rich woodsy taste, crisp texture and an excellent aroma. Maitake are also known as Hen of the Woods, Dancing Mushroom, Grifola frondosa and sheepshead. Sauté them in olive oil and a little butter, good in stew, spaghetti sauce and in stir-fry. Storage: If you do not use in a week, just clean, slice, put on a cookie sheet in the freezer until they are frozen through, then put in freezer bags for later use.
Note: Use caution when trying this species for the first time: some individuals report allergies to Maitakes. Try only a bite or two if you have never eaten them before.
